New Fall Workshops to Check out!

We have two new fall workshops to check out! Sign up online or at the shop!

Sourdough Basics: Nov 6th 6-8:30PM $75 a person

This is a class designed for someone interested in baking sourdough at home! All details of the baking process will be described and practiced in class, ending with your VERY OWN baked Sourdough boule! There is NOTHING like a fresh loaf of bread baking in your own oven!


Thanksgiving PIE Lab: Nov 13th 6-9pm $90 a person

This is a class designed for pie lovers! All of the steps in building a perfect crust, picking the right fruit/pie filling and designing and building a beautiful lattice will be practiced in class, ending with your VERY own baked off delicious pie! The Holidays are around the corner, time to hone in on your PIE skills!


Here is a BIO for our NEW Companion workshop instructor. We are SO excited to have her on board!

Jenn Sheridan:

Jenn has attended both The New School of Cooking in Los Angeles and Johnson & Wales University in Providence, RI. She spent a year working as a test baker on the cookbook From The Wood Fired Oven for Richard Miscovich. From there she went on to use her experience to work for a gristmill, Maine Grains, where she worked with bakers, farmers, chefs and brewers to help promote the importance of local grains and stone milled flours to help them translate the properties of these products and helping them transition in their own applications. Along the way Jenn has taught private baking classes, demonstrations as well as workshops including The Kneading Conference in Skowhegan, ME. While baking bread is her favorite way to spend time in the kitchen she never shies away from the opportunity to fry up some donuts for her friends.

Meet Our Instructors

As a fairly young small business, we know that our community outreach and local support is the number one most important relationship to foster. We are now heading into our fifth year with a “brick & mortar” shop and we couldn’t be happier with our West Side Bakeshop family! It’s all of you who keep us inspired and excited to come in each day and do what we do!  Our workshops are a way to give back to the community AND a way to encourage our awesome and skilled staff to share their passion with you!  About 25% of our class participants last season were through donated gift certificates from local school auctions and local non-profits.  We donate class spots to encourage our community to come together and learn, play and get to know one another through eating and drinking.
Each workshop is hands on and designed to engage and interact with the task at hand, whether learning the process of sourdough for your home kitchen, making flaky croissant dough or gaining an understanding & better technique for making killer coffee at home. We care about what we do and our goal is show this through our workshops!  A community who bakes & drinks (coffee) together stays together!
This season we are trying something new. We have made each workshop part of a series. You can pick and choose to take the whole 2-3 part series or you can enjoy them a-la-carte.  Whichever way you choose, you will still walk away from the class with a ton of information, caffeinated and with a full belly…plus some goodies to take home!  Each workshop runs about 2-3 hours and includes a short lecture/table talk on the subject, demonstration and most of all hand on practicing.

Michelle has been a part of the Companion family since Fall of 2012, and managing the Bakeshop’s retail team since January of 2013. Before that, she had already been in the coffee industry for close to four years, and had competed in the 2012 Southwest Regional Barista Competition. Michelle represented Companion in the 2013 Southwest Regional Barista Competition, and has enthusiastically taken on the training and coffee education of Companion’s baristas. Michelle draws inspiration from the ways that coffee connects us as both a local and a global community. Outside of her work at Companion, Michelle is an avid rock climber and outdoor adventure seeker.

Sarah has been with Companion since Fall of 2013. Sarah started her culinary foundation at Napa Valley Cooking School, located in St. Helena, California. After her program, Sarah completed an internship at Solbar, the Michelin starred restaurant located at a resort in Calistoga, California. After her internship, Sarah worked her way up the hot line, and finished on the Fish station. In addition, Sarah has held other restaurant and service jobs before decided to move to Santa Cruz. Sarah has been managing the pastry team and teaching classes at Companion Bakeshop since summer 2014.

Chris Baca


Chris Baca is a coffee lifer and is a co-owner of Cat & Cloud Coffee in Santa Cruz Ca. Chris is a three-time United States Barista Championship finalist, a Regional Barista Championship winner, and multiple-time regional finalist. He is also a Regional Brewers Cup champion, Coffee Fest Latte Art Championship winner, and has graced the cover of Barista Magazine. Chris is active in the Specialty Coffee Association of America’s trade guilds and served a two-year term on the Barista Guild of Americas Executive Council, and helped set up the BGA’s inaugural educational barista camp. He likes his coffee with a side of good friends and fun times so come party with him. Chris is currently working with the coffee team at Companion Bakeshop. 

Pie Pop-up on November 23rd!



That crispness in the air means only one thing for us here at Companion: PIE Season! We’ve been busy sourcing local fruits & vegetables, spices, and milled flour. Our pies this season are exceptional and we are so excited to share them with you. Your Thanksgiving guests will be filled with holiday goodness, your table will be adorned with baked beauty, and YOU will be supporting a local bakery who in turn, supports our local farms and community! It’s a win-win and we hope you agree!

On Monday November 23rd from 4-7PM we will be in downtown Santa Cruz at Assembly’s Pop-Up space selling our pies! We’ll have them whole and by the slice, plus a few goodies to go along with it, not to mention Ice cream from The Penny Ice Creamery!  Kick off the holiday season in fashion and join us!


Updated Hours

The seasons are changing, and so must our schedule. We’re sad to say that Community Pizza Nights with Uncie Ro are coming to a close for the Fall and Winter. Our last night hosting Ro will be Tuesday, October 6th. Don’t miss it!

After the 6th, Companion will close at 5pm on Tuesdays, instead of 7:30 pm.

The bright side is that Companion is now open from 7 am until 5 pm from Tuesday until Friday, and 8 am until 3 pm on Saturday and Sunday! That’s an additional full hour of Companionship on weekdays!

The Holidays are fast approaching, and making a memorable holiday pie can be a challenge- but it’s not too late to impress your friends with beautiful and delicious pies. Companion can help you over your holiday pie hurdles. These annual pie labs include detailed discussions, demos and hands on training with pie dough. We will also discuss fillings, bake times, assembling a beautiful pie, and, of course, working on your lattice skills!
These workshops fill up fast and are not to be missed!

$65 per student. 10 students per class.

Summer Workshops are Here!


It’s time! Starting THIS WEEKEND we’ll be hosting Workshops on a variety of bakery-related topics, focusing on Summer seasonal pastries and treats. Join our talented and friendly staff for a night of fun and knowledge (and eating, of course)

Sunday 7/19 Kid’s Summer Pies and Tarts 5:00 PM – 7:00 PM (Under 12) $65 (one child, one adult)

Kids 12 years and under, this one is for you! Bring your parent and learn how to bake a pie from SCRATCH! Hands-on technique included in this fun class! Learn to bake with the seasons and develop a new skill to show your friends!

Sunday 7/26 Breakfast and Brunch Pastries 5:00 PM – 7:00PM $65

Summer time is a sublime time for lazy breakfasts & brunches! Learn how to bake off a perfect pastry– from scones to quiche!

Sunday 8/16 Summer Pies and Tarts 5:00 PM – 7:00 PM $65

We’ll share a secret: the best time for pie is late summer! Nothing says late summer like juicy pies and hot kitchens! It’s also a great time to get a jump-start on your pie techniques before Fall!

Sunday 8/23 Croissant Basics 5:00 PM – 7:00 PM $65

This class will focus on croissant basics, specifically teaching techniques for a home kitchen. Includes the whole process: Mixing, shaping, proofing and finally, baking-off!

Sunday 8/30 S’mores & Chocolate Tasting 101 5:00 PM – 7:00 PM $75

Learn how to make grahams and mallows from scratch. Don’t cut corners! Make your own, you will taste the difference and have tons of fun, too! This class will also feature a chocolate tasting!

Sunday 9/20 The Savory Pastry 5:00 PM – 7 PM $65

We’ll teach you a different approach to traditional pastries– featuring savory pie dough, cream scones, and a savory “bread” teacake. Learn something new, bake outside the box and have fun with it!

Sunday 10/11 Gluten Free Pastry Basics 5:00 PM – 7:00 PM

Gluten free pastries can and should taste good! Come learn some interesting techniques and ideas for gluten free baking options from our talented staff.
